Confirmation of the fixture comes after last week's announcement that the Waratahs will play a double-trial against the Western Force on Thursday 10 February at Shoalhaven Rugby Park in Nowra on the NSW South Coast.
Waratahs coach Chris Hickey said clash with Fiji would be an important fixture for both sides.
"There's been a strong relationship between NSW Rugby, Waratahs Rugby and the Fiji Rugby Union for a number of years now, and this is the third straight season we've been able to invite them out for a pre-season match," said Hickey.
"It's a great development experience for the Fiji-based internationals and for us it's an extremely important match so close to the start of the season.
"Given we'll be just a fortnight away from playing the Rebels, most of our leading players will be involved in the trial against Fiji."
Hickey said the condensed pre-season program this year was a result of the changing nature of the upcoming season.
"The regular season goes for another month in 2011 and the teams involved in the semis will still be playing in July so we've needed to review everything we do from pre-Christmas training through to our trial matches and obviously our training and travel throughout the year," said Hickey.
"We think we've come up with a good series of matches kicking off with Fiji and moving into the double-header with the Force six days later.
"We've won all but one of our pre-season matches over the last three years and we've gone on to make winning starts in the opening round each season so we know how important it is to get on track in these matches.
"It might be a trial but we won't be holding back. We need to get our combinations clicking and our systems working so make sure we hit the ground running in round one."
